At Restaurant Olivia, our Apericena series uses the casual Italian "drink-and-dinner" format as an educational platform. Wine is the absolute star of the evening, beautifully complemented by a lighter, multi-course dinner and enriching conversations.
Join us around our community table for an exclusive, educational Apericena featuring host Kevin Day. Kevin is a dear friend of the restaurant and one of the great voices in wine today as the founder and editor-in-chief of OpeningaBottle.com, as well as author of Opening a Bottle: Italy. A phenomenal photographer, Official Alto Adige Wine Ambassador, and Colorado native, Kevin brings deep expertise and a personal connection to both our dining scene and global viticulture.
Throughout the night, Kevin will share his stunning photography and approachable teaching style as we journey through high alpine terrain. We’ll discover native grape varieties like Lagrein and Schiava alongside world-class examples of Gewürztraminer, Pinot Bianco, and Pinot Noir. Surrounded by alpine peaks much like Colorado, Alto Adige's grape growing is one of the most unique in the Italian wine landscape (and a German-speaking region too).
Kevin’s thoughtful approach and our casual community table make this the perfect setting to relax, connect, and learn, whether you are just beginning your wine journey or a seasoned collector. Chef Ty and the culinary team will prepare a light, two-pasta menu with charcuterie to start and dessert, perfectly paired with nine exceptional wines from multiple producers for an evening of lively conversation and deep education.

Host: Scott Thomas, Restaurant Olivia wine director
Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.
Scott is one of only 22 certified Italian Wine Experts globally, holds certifications as a Certified Wine Educator and Certified Sommelier, and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. He has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
