We’re thrilled to announce our first-ever wine dinner dedicated to the wines of Friuli Venezia Giulia, one of Italy’s most quietly influential and compelling regions.

Often regarded as the birthplace of Italy’s white wine renaissance after WWII, Friuli is home to both indigenous varieties and international grapes that thrive in its unique alpine-meets-Adriatic terroir. At the forefront of this movement are La Ponca and Le Monde — two wineries under the shared vision of the Maccan family, representing the Collio and Friuli Grave appellations respectively.

We’ll be joined by special guest Giovanni Luigi Brumat, global brand ambassador, who will guide us through a tasting of seven wines—featuring two Friulano, Ribolla Gialla, Sauvignon, and Pinot Grigio alongside Cabernet Franc and a sparkling Pinot Noir.

Chef Ty and the culinary team at Restaurant Olivia will craft five courses thoughtfully paired to highlight each wine, while Giovanni shares insights into the region’s history, diverse terroirs, and the philosophies behind each estate.

Host: Scott Thomas, Restaurant Olivia wine director

Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.

He holds certifications as a Certified Wine Educator and Certified Sommelier and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. Scott has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
