Jackson and his wife, Ayla, are the dynamic duo behind Granville Wine Co. They exclusively cultivate organic, biodynamic, volcanic, and high-altitude sites throughout the Willamette Valley, producing small-lot wines with a notable focus on Pinot Noir and Chardonnay. Jackson's expertise in Old World winemaking shines through his meticulous attention to detail and unique approach to each vineyard, a rarity in the New World.

Prepare for an evening brimming with conviviality as Jackson steers the conversation around our communal table, while Chef Ty prepares five Restaurant Olivia-style courses perfectly paired with six wines, including wines from one of Willamette's oldest vineyards, the Holstein Estate, where their winery now resides.

Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.

He holds certifications as a Certified Wine Educator and Certified Sommelier and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. Scott has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
