At Restaurant Olivia, our Apericena series uses the casual Italian "drink-and-dinner" format as an educational platform. Wine is the absolute star of the evening, beautifully complemented by a lighter, multi-course dinner and enriching conversations.

From the famed Alois Lageder Winery

Established in 1823, this family winery is located in the historic village of Magrè, where the winding Adige River and steep, towering peaks surround the vineyards to create a truly spectacular, one-of-a-kind setting and some of Italy’s most stunning wines.

Join us around our community table for an exclusive educational apericena featuring our host for the evening, Alois Clemens Lageder, the sixth-generation leader of Northern Italy’s benchmark winery.

Throughout the evening, we will explore exactly what makes this German-speaking region of Italy so incredibly special and unique in the Italian wine landscape.

Surrounded by alpine peaks much like Colorado, we'll dive into how this extreme vertical terrain impacts grape growing and explore Alois Lageder's pioneering approach: 100% of their estate vineyards and all 60 of their grower-partners are certified organic or biodynamic. This dedicated focus brings unmatched freshness and clarity to every bottle, perfectly aligning with our own ethos of sustainability and helping preserve the land for generations to come.

Clemens’ thoughtful, approachable style combined with the casual atmosphere of our community table, make this the perfect environment to relax, connect, and learn more about wine whether you are just beginning your journey or a seasoned collector.

Wines this evening feature native grapes such as Schiava, as well as international favorites like Pinot Noir, Cabernet Sauvignon, and Pinot Grigio, plus one of Italy's most unique white blends: Misto Mare.

Bringing it all together, chef Ty and the Restaurant Olivia culinary team will present a light, curated menu of charcuterie, two pastas, and dessert, each one highlighting the flavors and enhancing the stories of the Alois Lageder Winery.

Host: Paula Thomas, Restaurant Olivia’s sustainability director

Paula is a food professional with more than 20 years of experience, from restaurants to teaching, and working with community-based organizations.

She has worked with communities at the local and global level, promoting community-based programs that support food sovereignty and environmental justice. She has visited farms in Mexico, Colombia, Greece, The Philippines, and many European countries, to understand diverse methods of food production with an emphasis on the connection between our food and the environment. 

Her quest toward a more sustainable food system landed her a scholarship in 2022 to MAD Academy, the educational arm of Noma Restaurant (named the best restaurant in the world five years) for an intensive training in Environment & Sustainability with some of the most forward-thinking food professionals in the world.
