At Restaurant Olivia, we are driven by an obsession with Italy’s incredible diversity of grapes and regions. That focus has led us south of Rome, for our first-ever Lazio wine dinner featuring the wines of Marco Carpineti.

Tucked into the volcanic foothills of the Lepini Mountains, the hilltop town of Cori is one of Italy’s most historic yet criminally overlooked wine regions. Marco took over his family’s land in 1986 and became a pioneer of organic agriculture in 1994, stripping away chemicals and using horse-plowed rows and biodynamic practices to revive near-extinct ancient varieties. These are volcanic, high-altitude wines forged in tuff and limestone, showcasing Roman-era grapes like Bellone (the big, beautiful one), Cesanese, and the hyper-local Nero Buono.

Marco's son, Paolo, joins us as host for the night to tell these stories firsthand, unpacking the deep history and energy behind every glass, while Chef Ty and our culinary team have designed an exceptional five-course menu built specifically to lock in with Carpineti’s lineup.

We will be pouring Paolo’s entire offering, including the sparkling Kius Brut Millesimato, Capolemole Bianco, Capolemole Rosso, the amphora-aged Nzù Bellone, Tufaliccio, and the flagship red, Apolide Rosso.

These are distinct, thrilling wines that lit a fire under our team the second we tasted them. Expect a high-energy night of pure discovery and great conversation around our community table.

Host: Scott Thomas, Restaurant Olivia wine director

Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.

Scott is one of only 22 certified Italian Wine Experts globally, holds certifications as a Certified Wine Educator and Certified Sommelier, and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. He has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
