Join us for an immersive journey into the soul of Sicilian viticulture as we host a landmark wine dinner featuring the storied estates of Tasca d’Almerita.
This evening offers a rare, comprehensive look at the Mediterranean’s largest island, traversing diverse terroir from the ancient Phoenician island of Mozia to the high-altitude volcanic slopes of Mt. Etna.
We are honored to be joined by Costanza Chirivino, the Brand Manager for the Sallier de La Tour estate, which has been in her family’s name since 1756. Raised among the vineyards and the sea, Costanza brings an unparalleled depth of expertise to our table, having previously served as the hospitality manager at the internationally acclaimed Anna Tasca Lanza cooking school.
Throughout the night, our culinary team will present five courses meticulously designed to pair with seven distinct wines representing the Tasca family’s most prestigious holdings.
Widely regarded as one of the most knowledgeable figures in the industry, Costanza will guide our conversation as we explore Grillo from the historic island of Mozia, Inzolia and estate-defining Syrah from Monreale, and Carricante and Nerello Mascalese from Mt. Etna, including single contrada wines never seen in Colorado.
We are hosting this experience on back-to-back nights at our sister restaurants, Restaurant Olivia and Dear Emilia. While the seven-wine flight remains the same, each venue will offer a completely distinct menu, providing two unique perspectives on the magic of Sicily.

Host: Scott Thomas, Restaurant Olivia wine director
Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.
Scott is one of only 22 certified Italian Wine Experts globally, holds certifications as a Certified Wine Educator and Certified Sommelier, and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. He has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
