We are thrilled to announce our first wine dinner of the year at Restaurant Olivia, featuring the remarkable wines of Caiarossa.
The name may sound familiar. Last year, we had the privilege of hosting a dual wine dinner with Caiarossa alongside its sister property, Château Giscours. Tasted side by side, the wines reaffirmed exactly why Caiarossa has held a place on our list since day one.
Caiarossa is located on the Costa Toscana, the western hills of Tuscany, where a true Mediterranean climate allows Cabernet Franc, Syrah, Cabernet Sauvignon, and Merlot to thrive. Shaped by Bordeaux ownership and philosophy, the wines reveal two distinct identities, one rooted in Tuscany, the other informed by French precision. The result is a singular expression that feels both powerful and refined.
The evening will be guided by Caiarossa Brand Ambassador Ivo Assanelli, leading us through a multi vintage exploration of the estate. The lineup includes a vertical of 2006, 2010, and 2019, along with Aria and Pergolaia, both new to Colorado. Six wines in total, paired with five courses thoughtfully prepared by the Restaurant Olivia culinary team.

Host: Scott Thomas, Restaurant Olivia wine director
Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.
Scott is one of only 22 certified Italian Wine Experts globally, holds certifications as a Certified Wine Educator and Certified Sommelier, and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. He has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
